Y’all, this is one of my favorite on-the-go dinners. It is super simple to throw together, delicious and nutritious! We almost always eat it vegetarian, but you could always add a meat to mix it up, too!
2 cups cooked brown rice
1-2 Tbsp. taco seasoning
1 can black beans, drained and rinsed
2 avocados, sliced
1 cup shredded cheddar cheese
Place personal portions of each ingredient above in a bowl and enjoy!
