Full disclosure: I don’t like Reese’s Peanut Butter Cups (or the eggs, or any other variety). These Homemade Chocolate Peanut Butter Eggs are just right, though.
Reese’s are too… peanut buttery? Weird I know, but there is something I don’t like. They’re a bit too potent for me. The ones in this homemade recipe I’ve used for years, thanks to a former co-worker, are definitely a bit more on the sweet side. I also add dark chocolate, which is personal preference, but everyone, including the kids loves it!
HOMEMADE PEANUT BUTTER EGGS
Yield: 35 eggs
3/4 c. butter
4 c. confectioners sugar, divided
1 c. marshmallow cream
1 1/4 c. peanut butter
1.5-2 lbs chocolate (candy melts, baking chocolate or chocolate chips all work!)
- Cream together butter + 1 c. confectioners sugar in mixer.
- Add marshmallow, remaining 3 c. confectioners sugar and peanut butter.
- Chill mixture for several hours, or overnight.
- Shape mixture into eggs. A melon baller is good to use if you want uniform size. Otherwise, you can really make them whatever size you prefer. We make ours on the larger size, so it’s about 2-3 bites full.
- Chill again for several hours, or overnight.
- Melt chocolate either using a double boiler or the microwave.
- Dip eggs into coating chocolate and chill for a few hours.
- Decorate with candy melts colored candies if you prefer!
The thing I love about this recipe, is you really can’t mess it up, and you can make it whatever you want! Want to add mini chocolate chips, go for it! Maybe some broken up Reese’s (if that’s your thing), do it! Instead of drizzles and dots want to paint on the decorations, go for it! Have fun and then enjoy!
